This simple buttery parmesan pasta bowl is pure comfort—cozy, satisfying and full of flavor. It’s the kind of dish you crave when you’re tired, under the weather, or just don’t know what to make. Mild, soothing, and endlessly adaptable, it pairs well with almost anything.

I first shared this on Substack last fall and ended up making it on repeat when the weather turned cold. It’s incredibly easy—great for beginners learning to cook—and reminiscent of simple childhood buttered noodles. With butter, pasta, garlic and parmesan, it’s hard to go wrong.

My mom made pasta with tomato sauce weekly, but I always preferred plain noodles with butter and cheese. This recipe gives that same nostalgic comfort with a little extra flavor and elegance—brown butter notes, toasted pasta, lots of garlic and melty parmesan.
It’s a neutral, crowd-pleasing dish that’s kid-friendly and quick to prepare when you’re unsure what to cook.

What makes this version special is toasting the pasta in butter first, like I do with orzo. Toasting develops a caramelized, nutty flavor that deepens the finished dish. Then garlic, chicken stock and parmesan are added; the pasta simmers in the stock so the flavors become rich and cohesive. Use a small-pasta shape—ditalini or mini tubes work especially well.

How it comes together:
Melt butter in a skillet and add the ditalini, toasting until golden. This creates a rich, caramelized flavor. Add minced garlic and cook briefly, then pour in chicken stock and bring to a boil. Reduce to a simmer and cook, uncovered, stirring occasionally, until the pasta is tender and the liquid is mostly absorbed. If it looks too wet at first, it will continue to absorb as it rests.
Turn off the heat and stir in shredded parmesan until it melts and coats the pasta. Finish with chopped fresh herbs—parsley or basil—for brightness, and serve immediately with extra parmesan.

- 4 tablespoons butter
- 2 cups ditalini pasta
- 4 garlic cloves, minced
- 4 cups chicken stock
- 1 cup parmesan cheese, plus more for serving
- 3 tablespoons chopped fresh parsley or basil
Instructions

Heat the butter in a saucepan over medium heat. Add the pasta and cook, stirring often, until the pasta is toasty and golden, about 3 to 4 minutes. Add the garlic and cook for 30 seconds.

Pour in the chicken stock and bring to a boil. Reduce to a simmer and cook, uncovered, stirring frequently, until the liquid is mostly absorbed and the pasta is tender, about 10 to 12 minutes.
