Ingredients
- 4 medium sweet potatoes
- 1 pound lean ground beef (or turkey)
- Kosher salt and pepper, to taste
- 3 tablespoons ketchup
- 2 tablespoons yellow mustard
- 3 to 4 tablespoons house sauce (recipe below), plus more for topping
- 6 ounces sharp cheddar, freshly grated
- 1 cup shredded lettuce, for topping
- 3/4 cup chopped tomatoes, for topping
- Pickled onions and pickles, for topping
How Sweet Eats House Sauce
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon yellow mustard
- 1 tablespoon honey
- 1 tablespoon your favorite BBQ sauce
Instructions
- Preheat oven to 425°F. Scrub the sweet potatoes, poke each with a fork several times, brush or spray with olive oil and place on a baking sheet.
- Roast the potatoes 45–55 minutes, until very tender inside. Let cool until easy to handle.
- While the potatoes roast, heat a skillet over medium and add the ground beef. Season with salt and pepper and cook until browned, breaking into small crumbles.
- Stir in ketchup and mustard until evenly combined. Remove from heat and add a small sprinkle (1–2 ounces) of cheese; let the beef cool slightly.
- Slice each roasted potato down the center and, if desired, gently mash some of the flesh with a fork. Spoon cheeseburger beef into each potato and top with shredded cheddar. Drizzle with house sauce.
- Return the potatoes to the oven for 5–10 minutes until the cheese melts.
- Remove from oven and finish with shredded lettuce, tomatoes, pickles, pickled onions and extra house sauce. Serve immediately.
House Sauce
Whisk mayonnaise, Dijon mustard, yellow mustard, honey and BBQ sauce together until smooth. This can be made a day ahead and refrigerated.
