Every year when we return from northern Michigan, I come home inspired to recreate dishes I loved while we were there. I almost always remake something from Café Sante — we stayed close enough to walk, and in past visits we ate there every day because it’s that good.

It was one of the most memorable dishes I’ve ever had. The dough recipe yields a single pizza that serves about four. It’s a straightforward yeast dough made with warm water, active dry yeast, a touch of honey, olive oil, flour and salt. Let it rise until puffy, shape it into your desired pan or freeform crust, then top and bake.

The assembly is simple: spread the ricotta and a little mozzarella over the dough, arrange halved strawberries, spoon on caramelized onions and scatter chopped, crisp bacon. Strawberry Pizza with Bacon and Caramelized Onions

Ingredients

Dough

  • 1 1/8 cups warm water
  • 3 teaspoons active dry yeast
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 3 cups all-purpose flour (plus 1/2 cup more for kneading)
  • 1 teaspoon salt

Pizza

  • 8 slices bacon, chopped and cooked until crisp
  • 1 sweet onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 1/2 cups ricotta cheese
  • 6 ounces mozzarella, freshly grated
  • 1 pint strawberries, hulled and halved
  • 2 tablespoons freshly grated Parmesan
  • Fresh basil and oregano for topping

Strawberry Balsamic Reduction

  • 1/2 cup chopped strawberries
  • 2/3 cup balsamic vinegar

Instructions

  • In a large bowl, combine warm water, yeast, honey and olive oil. Stir and let sit until foamy, about 10 minutes. Add 2 1/2 cups flour and salt, stirring until the dough comes together but remains sticky. Work in the remaining 1/2 cup flour on a floured surface and knead a few minutes until smooth. Oil the bowl, place the dough inside, cover and let rise in a warm spot for 1–1 1/2 hours.
  • While the dough rises, cook the bacon in a skillet over medium-low heat until crisp. Remove with a slotted spoon and drain on paper towels. Keep the skillet over low heat, add the sliced onions and a pinch of salt, then cook covered, stirring occasionally, until caramelized, about 45–60 minutes. Add the garlic halfway through the caramelization.
  • After the dough has risen, punch it down and shape it into your desired pizza size on a baking sheet or pizza pan. Cover and let rest 10 minutes. Preheat oven to 425°F (or 475°F if using a pizza stone).
  • Spread ricotta and mozzarella over the dough. Top with halved strawberries, caramelized onions and crisp bacon. Optionally drizzle some balsamic reduction now or add it after baking.
  • Bake 20–25 minutes (or 15–20 minutes on a hot pizza stone) until cheese is golden and bubbly. Remove from oven, sprinkle with Parmesan and fresh herbs, drizzle with the cooled strawberry-balsamic reduction, slice and serve.

Strawberry Balsamic Reduction

  • Puree chopped strawberries in a blender or food processor.
  • Combine the puree and balsamic in a small saucepan over medium-low heat. Bring to a boil briefly, then reduce to a simmer and cook until reduced by about half, 8–10 minutes. Watch carefully to avoid boiling over. Cool before using.
