I told you I made a lot of bacon this weekend.

Maple Bacon Brown Sugar Scones

This recipe is what converted me from a scone skeptic to a full-on scone lover. It began with cinnamon chip scones and progressed through chocolate cinnamon scones, but the natural next step was to add bacon and brown sugar. Yes, brown sugar makes everything more indulgent — and topping these with a maple glaze puts them over the top.

These are the best scones I’ve ever had. If you think scones are boring, bland, or dry, bake these and let them change your mind. My family hasn’t fully embraced bacon in baked goods yet—so I get to enjoy these as my own delicious little rebellion.

Maple Bacon Brown Sugar Scones

Makes 16 scones

Ingredients:

  • 3 1/4 cups all-purpose flour
  • 1/3 cup brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup cold butter, cubed
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 5 strips cooked bacon, crumbled (cinnamon-sugared bacon works great)
  • Coarse sugar for sprinkling

Directions:

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk and vanilla, then fold in the crumbled bacon.
  5. Turn the dough onto a lightly floured surface and knead gently just until it comes together.
  6. Divide the dough in half and pat each portion into a 7-inch round. Brush the tops with melted butter and sprinkle with coarse sugar.
  7. Cut each round into 6 or 8 wedges and place them on a baking sheet.
  8. Bake at 425°F for 12–14 minutes, until golden. Remove from the oven and top with the maple glaze.

Maple Glaze

  • 1 1/2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • 1 cup powdered sugar
  • Water, a drop at a time, to adjust consistency

Combine the maple syrup, vanilla, and powdered sugar, stirring until smooth. Add water one drop at a time to reach the desired consistency; if it becomes too thin, add a little more powdered sugar. Drizzle or spread the glaze over the warm scones.
