Hello hello! Today we’re talking about an embarrassingly easy shake that belongs in your summer rotation.

It may not be the prettiest once blended, but this shake is packed with fresh mint, cookies, and creamy ice cream. It’s the kind of treat that makes your inner ten-year-old very, very happy.
And yes, I’m doing you the favor of explaining how to use a blender to make something delicious.

Eddie’s favorite ice cream flavor is cookies and cream. When it comes to dessert, he’s all about cookies and cream—he even layers crushed cookies into frozen yogurt, building a giant bowl with alternating yogurt and cookie layers until it’s massive.
I had Father’s Day in mind when I made these milkshakes, but I couldn’t resist adding fresh mint to a couple of them.
Eddie doesn’t like mint with chocolate — he says it tastes like chocolate toothpaste, which he finds horrifying.

I couldn’t resist though. The herb garden is thriving this year, probably thanks to all the rain, and I planted mint in a separate pot so I’ve already got a ton to use. Fresh mint brightens everything.
You might remember way back when I shared milk chocolate cupcakes with fresh mint frosting. Sure, I joked they were “toothpaste cupcakes,” but they were fantastic — people still make them, which is wild.

Isn’t this basically health food since there’s a green leaf in it? I think so.

Fresh Mint Cookies and Cream Shake

milk
almond, coconut, or cow’s — your choice -

chocolate sandwich cookies
like Oreos -
1
handful of fresh mint leaves
plus extra for garnish -

teaspoon
vanilla extract
Instructions

Add all ingredients to a blender and blend until smooth. Serve garnished with a sprig of fresh mint, whipped cream if desired, and extra cookies on top.
