This summer I’ve been obsessed with cobblers. If you follow me on Instagram you probably saw me cobbler-ing everything over the last two weeks. I tested four different cobbler recipes over Memorial Day weekend alone — yes, four — and luckily we had friends and family stopping by every day to help taste-test. We also consumed a pretty embarrassing amount of ice cream.

Strawberries are my favorite fruit, and I usually prefer them fresh — not roasted, not baked into pie. I love biting into a perfect, juicy strawberry any time of day. But this strawberry cobbler changed my mind: it’s incredible. If you love strawberries, it’s on another level, especially when served warm with a generous scoop of vanilla (or chocolate) ice cream.

A few weeks ago we went strawberry picking for the first time, which was so much fun — at least for me. Max decided his hands were too dirty, leaving Eddie and me to pick the berries. Eddie got tired quickly, and when we went to check out we noticed boxes of freshly picked berries we could have bought instead. But where’s the fun in that? I’m determined to make strawberry picking a new tradition, even if my helpers aren’t as enthusiastic.

We were probably overzealous and grabbed more than we needed, which meant an abundance of strawberries for desserts.

This cobbler leans a little heavy on the biscuit-like topping — and I love that. The strawberries are the star, but I also crave bites that taste like a tender vanilla cake with every mouthful. The balance of bright fruit and rich, slightly sweet biscuit is perfect.

After my cobbler marathon on Instagram Stories, so many of you asked for the recipe. It may be the most requested recipe I’ve shared here. I hope you make it — it tastes like summer in a dish. It’s ideal for gatherings but also easy enough for a spontaneous weeknight dessert to enjoy on the patio while watching fireflies.

Ingredients

  • 3 cups chopped/halved strawberries I like a mix — some small whole, some sliced in half
  • 1/3 cup sugar
  • 1 tablespoon cornstarch

Topping

  • 1 1/3 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • pinch salt
  • 6 tablespoons unsalted butter cold and cut into pieces
  • 1 egg lightly beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • vanilla ice cream for serving

Instructions

  • Preheat the oven to 350°F. Spray a 9×13-inch baking dish (or a 9-inch round) with nonstick spray. Toss the strawberries with the sugar and cornstarch until evenly coated.
  • For the topping, whisk together the flour, sugar, baking powder, cinnamon and salt. Cut the cold butter into the dry ingredients with a fork, pastry blender or your fingers until the mixture resembles small crumbs. Beat the egg with the milk and vanilla, then stir into the dry ingredients to form a dough. Drop spoonfuls of the dough evenly over the strawberries.
  • Bake for 35 to 45 minutes, until the topping is golden and cooked through. You can lift the edge to check that the underside is done.
  • Serve warm with scoops of vanilla ice cream.

Notes

If your strawberries are less sweet, increase the sugar for the berries to 1/2 cup.
