I’m completely head over heels for peach cobbler as a dessert, but transforming that flavor into granola is even better—crunchy, sweet, and versatile. It’s honestly one of my favorite ways to enjoy peaches year-round.

It’s easy to make. The wet ingredients are butter, brown sugar and peach jam; the star flavors come from peach preserves and finely chopped dried peaches, which become wonderfully caramelized in the oven.

For the dry mix, use old-fashioned rolled oats, chopped pecans and the finely chopped dried peaches. This is the place to customize—swap in walnuts or add seeds like chia or hemp, or a tablespoon of ground flax for more nutrition.

The dry ingredients are where you can get creative.

Combine everything on a baking sheet, bake until golden and toasty, stir a couple times while baking, then let cool. Once it’s set, stir in or sprinkle white chocolate chips—these add a creamy, vanilla-like richness that turns the granola dessert-like without being excessive.

Ingredients

  • 6 tablespoons unsalted butter, melted
  • ⅓ cup packed light brown sugar
  • ⅓ cup peach preserves
  • ½ teaspoon kosher salt
  • 2 teaspoons pure vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1½ cups pecans, chopped
  • 8 dried peaches, finely chopped
  • ½ cup white chocolate chips

Instructions

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  • Heat the butter, brown sugar, preserves and salt in a saucepan over medium-low heat until the butter is melted. Whisk to combine, turn off the heat and stir in the vanilla.
  • In a large bowl, combine the oats, pecans, dried peaches and any optional flax or seeds. Add the wet ingredients and toss until everything is evenly coated.
  • Spread the mixture on the prepared baking sheet. Bake for 35 to 40 minutes, stirring twice during baking to ensure even toasting.
  • Remove from the oven and let cool completely. Break into clusters and stir in or sprinkle the white chocolate chips. Store in an airtight container for up to one to two weeks.
  • Serve with milk, over yogurt, or enjoy by the handful.
