I had banana bread. I wanted chocolate. And I always want cheese.
My banana bread was a little stale — which in our house is an achievement, since we usually finish a loaf almost immediately.
Why aren’t loaf pans larger? If they were two by four feet instead of 9×5 inches, no one would worry about eating the whole loaf the day it’s baked.

Even I thought a banana bread grilled cheese sounded a little strange, so I asked on social media whether I should try it. You all encouraged me — thank you for being delightfully weird. We clearly like the same odd combinations.
I’m a grilled cheese fanatic. Toast the bread, melt the cheese — I could eat it constantly. I even teach a class on grilled cheese techniques.

Also: how cute are these metallic rose-gold mugs? A friend sent me one, I grabbed another at Starbucks during the holidays, and they brighten my days. Small pretty things make life better.

If you love sweets and cheese, this sandwich is irresistible: melty brie paired with dark chocolate tucked between thick slices of banana bread. I used a banana bread I’ll include in my cookbook later this year, but there are plenty of excellent banana bread recipes available to try.
Because banana bread is soft and dense, it won’t crisp the same way as crusty bread. Use thick slices so the sandwich holds together. You can assemble it like a traditional grilled cheese or butter both outsides and pan-fry both sides, then place the cheese and chocolate inside and keep the sandwich over low heat until the fillings melt.
Yes — the insides melt, and it’s as delicious as it sounds.

Ingredients
- 4 slices banana bread, if it’s slightly stale, even better!
- 2 tablespoons unsalted butter, softened for spreading
- 6 ounces brie cheese
- 4 ounces dark chocolate, chopped
Instructions

Heat a large skillet or griddle over medium heat. Butter the outsides of the banana bread and place one slice butter-side down in the skillet. Immediately top it with brie, a sprinkle of chopped dark chocolate, and more brie so the cheese on both sides helps “glue” the sandwich when you flip it. Cook until both sides are golden and the cheese and chocolate are just melted, about 4 minutes per side. If the cheese is melting slowly, lower the heat to medium-low and cover the skillet briefly, watching carefully so the bread doesn’t over-brown.
