Here’s another super-easy, quick appetizer that’s perfect for last-minute entertaining.
Have you seen those mini rye breads sold near the deli or gourmet cheese section? They make a fantastic base for simple, flavorful bites.
My mom started making this appetizer last year. It’s fast, uncomplicated, and always a hit.

You can use any spread you like. We enjoy a gorgonzola-flavored spread, but spinach-artichoke spread, a flavored hummus, or any creamy cheese spread would be delicious.


You can also top them with a sprinkle of grated cheese, a spoonful of preserves, or even a small wedge of brie for an indulgent touch.
If you pile on a slice of gourmet brie, be prepared to want more—these are dangerously easy to eat.
If you’re anything like me, you’ll gobble them all up. They’re that good.
To make them, simply spread about a tablespoon of your chosen cheese or spread onto each mini rye, place the rounds on a baking sheet, and bake until the topping is golden and bubbly.


This is truly the ideal last-minute appetizer. If you watch them closely under the broiler, they can take as little as five minutes to finish—just keep an eye on them so they don’t burn.
When they’re done, transfer them to a platter and serve warm. No fuss, no fancy plating—just irresistible bites that disappear fast.

There’s nothing elaborate about these, because they don’t need to be—their flavor speaks for itself.
The cheese browns and bubbles beautifully, which is my favorite way to enjoy melted cheese.

I’ll admit I tend to hoard the cheesy tops of dishes for myself — guilty as charged.

Mini Rye Breads

package mini rye breads -
1
container cheese-flavored spread
I used gorgonzola
Instructions

Preheat oven to 400°F (204°C).

Arrange mini rye breads on a baking sheet. Spread about a tablespoon of the cheese spread on each. Bake for 10–15 minutes, or until the cheese is golden and bubbly. For a quicker finish, place under the broiler and watch closely—about 3–5 minutes may be enough.
