  • 1 pound fingerling or baby Yukon Gold potatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon freshly grated lemon zest
  • ½ teaspoon dried thyme
  • ½ teaspoon salt

  • 1 pound salmon
  • ¼ cup pesto

Instructions 

  • Preheat the oven to 425 degrees F.
