Mini Chocolate Chip Cookie Ice Cream Sandwiches

These adorable, bite-size ice cream sandwiches are quick and easy to assemble. They can be a little messy to make, but that’s part of the fun.

We prefer our chocolate chip cookies very thin. That preference comes from my dad’s grandmother, who made incredible thin chocolate chip cookies. At a family reunion a few years ago we even held a cookie bake-off to see who could recreate her cookies best.

Luckily, I married someone who also likes his chocolate chip cookies thin. It makes up for some questionable taste in framed photos he moved into our home.

Because thin cookies are our favorite, I filled them with low-fat frozen yogurt to keep the sandwiches light and slightly healthier than traditional ice cream sandwiches.

They may not be the most elegant desserts, but they’re delicious and relatively low in calories because the cookies are so light. Being bite-size also makes them irresistible—you can easily enjoy a few without feeling guilty.

Of course I had to add a playful touch with hot pink sprinkles. I love a pop of pink for occasions like this.

Bite-Size Chocolate Chip Cookie Ice Cream Sandwiches

Makes about 20 bite-size sandwiches

Ingredients:

– 20 baked chocolate chip cookies (use a tablespoon measure when dropping dough so the cookies bake bite-size)

– 1 pint low-fat frozen yogurt

– Sprinkles for decoration (optional)

Instructions:

1. After baking, let the cookies cool completely. Place the cooled cookies in the freezer for about 10 minutes so they become firm but not rock-hard.

2. While the cookies chill, remove the frozen yogurt from the freezer and let it soften slightly so it’s easy to scoop.

3. Scoop roughly 2 tablespoons of softened frozen yogurt onto the flat side of one cookie, then top with a second cookie to form a sandwich. Press gently so the yogurt spreads evenly between the cookies.

4. Roll the edges in sprinkles if desired for a festive touch.

5. Place the finished sandwiches on a tray and freeze for 15–20 minutes to firm up before serving.

These little sandwiches are perfect for a Valentine’s treat, a party platter, or any time you want a sweet, shareable bite. Enjoy!
