Elvis-Inspired Peanut Butter & Banana Granola Bar Recipe

You all made me do it. I’m blaming you.

After I shared the 5 Ingredient Peanut Butter Granola Bars and casually mentioned bacon, the idea would not leave my head. Your comments — equal parts encouragement and horror — kept nudging me toward trying it. Then Maria reminded me it was Elvis Presley’s birthday, and I figured: how could I not make an Elvis-inspired bar? Consider it a savory tribute to a legend.

Of course I added my own twist and threw in chocolate because I have zero self-restraint. After all, I did boost the bars’ protein, so a little chocolate didn’t seem like a crime.

The Elvis Granola Bar

Ingredients

  • 4 cups rolled oats
  • 2 tablespoons chia seeds optional, they add nice texture
  • 1/2 cup unsalted peanuts, chopped
  • 1/2 cup chopped dried bananas
  • 1/2 cup crumbled bacon
  • 1/2 cup chocolate chips
  • 3/4 cup natural peanut butter, melted
  • 1/2 cup + 2 tablespoons brown rice syrup (or honey)

Instructions

  • Preheat the oven to 350°F. In a large bowl, combine the oats, chia seeds (if using), dried banana, chopped peanuts, chocolate chips and crumbled bacon. Add the melted peanut butter and the brown rice syrup (or honey) and stir until everything is evenly moistened. If the mixture seems dry, add additional peanut butter or honey a tablespoon at a time until it holds together.
  • Press the mixture firmly into a baking dish — an 8×8 or 9×13 works well — and bake for about 25 minutes. Allow the bars to cool completely before cutting so they hold their shape.
