I currently have four squashes sitting on my counter. Squashes? Squashs? Squashes’? I’m not sure which is correct, but I definitely have way too much squash — especially for someone who doesn’t exactly adore it, but certainly likes it.

I will probably share a bunch of squash recipes this week (yes, just this week!), but for now I remembered a set of fall recipes I posted last year. I love creating new recipes, but that also means some great dishes get forgotten.

Quick story: one Friday I spent a morning preparing what I thought was the perfect batch of mac and cheese for Mr. How Sweet — buttery breadcrumbs, freshly grated Parmesan, the sort of crisp topping that bakes up beautifully. I came home that evening to find half the dish already gone, eaten straight from the pan — unbaked — and heated in the microwave.
