Since having kids, every holiday is an opportunity to make playful, kitschy food and decorate like a kid again. For the next couple of weeks we’ll be living in red, white and blue — and snacking non-stop, of course.

These cupcakes aren’t a complicated invention — they start with the confetti cupcake recipe from Seriously Delish that I’ve used before — but I added a fun twist: Pop Rocks sprinkled on top for a crackling, popping finish.

They’re playful and noisy; when I first gave one to my son Max he was startled, but he quickly loved it. The pop-and-crackle effect is nostalgic and reminds me of summer treats from childhood.

Pop Rocks always feel like a special treat — something reserved for parties or summer days. They’re full of artificial coloring and novelty, so I only bring them out for an occasion. Still, that audible crackle gives these cupcakes a playful, firecracker-like finish.

I can’t help but think about the little pleasures from childhood: one of mine was working the concession stand at my brothers’ baseball games. For some reason I loved it — handling snacks, selling to neighbors, and feeling like a grown-up for an evening. Those memories make the Pop Rocks crackle feel even more like a rite of passage.

To preserve that crackle, sprinkle the Pop Rocks on right before serving. If it’s humid or warm where you are, they’ll start popping as soon as they touch the frosting.

For frosting, I’m team cream cheese. It’s rich, tangy and lifts a simple vanilla confetti cupcake to another level. Lately I’ve stopped apologizing for smothering cakes and cupcakes in cream cheese frosting — it’s the perfect match here.

Layer cake, sheet cake, or cupcakes — cream cheese frosting is often my first choice. It balances the buttery cake and the sweet sprinkles, and it helps the Pop Rocks adhere when you add them at the last minute.

One quick safety note: I don’t recommend placing a burning sparkler directly into a cupcake. That said, a sparkler in photos is a classic Fourth of July prop — just use caution and common sense if you choose to stage one for a picture.

These 4th of July cupcakes are super fun — confetti cupcakes topped with red, white and blue sprinkles and optional Pop Rocks for a crackling finish.

Ingredients

  • 1 1/2 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg + 1 egg white
  • 2 tablespoons vegetable oil
  • 3 teaspoons vanilla extract
  • 1/2 cup whole milk
  • 1/3 cup red, white and blue sprinkles

Cream Cheese Frosting

  • Two 8-ounce blocks cream cheese
  • 1/2 cup unsalted butter
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Red, white and blue sprinkles for decorating
  • Pop Rocks candy for topping (optional)

Equipment

  • Stand mixer (or hand mixer)

Instructions

  • Preheat the oven to 350°F. Line a cupcake tin with liners.
  • In a small bowl, whisk together the cake flour, baking powder and salt. Set aside.
  • In the bowl of a mixer, beat the butter until creamy. Add the sugar and beat on high until fluffy, about 2–3 minutes. Add the egg and egg white and mix on medium until combined. Scrape down the bowl as needed. Add the oil and vanilla and beat another minute.
  • With the mixer on low, add half the dry ingredients, then the milk, then the remaining dry ingredients. Mix on medium until combined. Gently fold in the sprinkles with a spatula.
  • Spoon batter into liners about two-thirds full. Bake 18–22 minutes, until tops are golden and a toothpick comes out clean. Let cupcakes cool completely before frosting.

Cream Cheese Frosting

  • Beat the cream cheese and butter until smooth. Add the powdered sugar a little at a time, then beat in the vanilla until the frosting is creamy and spreadable.
  • Frost the cooled cupcakes, immediately sprinkle with red, white and blue sprinkles. If using Pop Rocks, add them just before serving so they retain their crackle.
