Crispy Buffalo Smashed Potatoes with Blue Cheese Dip

These crispy buffalo smashed potatoes are irresistible. Golden, crunchy smashed potatoes are topped with melty blue cheese, drizzled with buffalo wing sauce, and finished with lots of cilantro and green onions. They make a perfect game-day snack or a flavorful side dish.

It’s time to buffalo wing everything. These crispy smashed potatoes soak up wing sauce and pair perfectly with blue cheese, fresh green onions, and bright cilantro. They’re ideal for watching the big game or serving alongside grilled chicken for an easy weeknight meal.

While I also love chipotle candied bacon smashed potatoes, this buffalo take brings back memories of baked homemade fries I used to make all the time.

In case I need to be clear: I love buffalo flavors even without the chicken. Wing sauce, green onions, blue cheese, ranch and cilantro — give me it all.

I especially love those flavors piled on top of something crispy, crunchy, and salty.

You can absolutely add chicken if you prefer. Shredded rotisserie chicken works great — just stir it on top of the potatoes before melting the cheese.

Easy as that!

I’ve flavored smashed potatoes in many ways: French onion, chipotle cheddar, pesto, even smashed sweet potatoes with chili. There’s no version I don’t enjoy.

The texture — the crunch — is everything. These are a favorite side for both adults and kids because they basically taste like fries but are even better when topped with buffalo flavors.

When it comes to buffalo-inspired dishes, I prefer blue cheese, though ranch is a fine substitute. If your family isn’t into blue cheese, try melting cheddar on top and finishing with a ranch drizzle and buffalo sauce.

Ingredients

  • 2 pounds baby Yukon gold potatoes
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon garlic powder
  • ½ cup crumbled blue cheese
  • cup buffalo wing sauce
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh cilantro
  • ranch dressing for serving

Instructions

  • Place the potatoes in a large pot and cover with cold water. Bring to a boil, then simmer until the potatoes are just fork-tender. Drain and let cool slightly.
  • Preheat the oven to 450°F (230°C).
  • Brush a baking sheet with 1½ tablespoons of olive oil. Arrange the potatoes on the sheet and gently smash each one with your hand or the bottom of a glass, keeping them mostly intact.
  • Drizzle the remaining olive oil over the potatoes and season with salt, pepper, and garlic powder.
  • Roast in the oven for 25 to 30 minutes, until the potatoes are golden and crispy.
  • Remove the sheet and sprinkle the potatoes with blue cheese. Return to the oven for about 5 minutes, until the cheese melts.
  • Finish by drizzling buffalo wing sauce over the potatoes and topping with green onions and cilantro. Add extra blue cheese if desired and serve immediately.
