It’s our first true summer menu now that June is here!

We’ve got grilled mains, bright salads, and one of my favorite lunches lined up. Everything is easy, seasonal, and full of flavor.

What to Eat This Week
Start the week with roasted corn and black bean burgers. They’re hearty, flavorful, and perfect for summer. Serve them with a bright asparagus pasta salad for a delicious contrast of textures and fresh flavors.
On Taco Tuesday, enjoy spicy fish taco bowls topped with mango pico. They’re flexible—you can toss in whatever fresh produce or toppings you have on hand for a fast, satisfying meal.
Midweek, try coffee-crusted steak with herbed corn salsa. The bold crust and sweet, herby corn make a great pairing. Add a simple summer house salad to keep the meal light and refreshing.
Next up: pineapple chorizo rice bowls. These come together quickly and pack a punch of sweet-and-spicy flavor. They’re a family favorite and great for busy nights.
For an easy, comforting option, make sheet pan gnocchi with roasted vegetables. It’s one-pan, low-effort, and surprisingly decadent—perfect for when you want something cozy without much fuss.
Save the weekend for roasted buffalo cauliflower flatbread. It’s spicy, tangy, and satisfying—an ideal casual dinner to share with friends or family.
Make a batch of smoky summer chicken salad for lunches you can grab all week. It keeps well and is great on greens, in a sandwich, or stuffed into pita pockets. For breakfast, blend up coffee coconut shakes for a creamy, energizing start to your day.
