Ingredients

  • 4 large sweet onions, thinly sliced
  • 4 tablespoons butter
  • kosher salt and pepper
  • 1 pound lean ground beef
  • crumbled blue cheese, for topping
  • 1 head iceberg lettuce, leaves pulled off and washed
  • 2 to 3 tablespoons chopped fresh chives, for topping

  • 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard

Instructions

  1. Heat the butter in a large skillet over medium heat. Add the sliced onions with a big pinch of salt, pepper, and thyme if using. Cook 10–12 minutes, stirring often, until they begin to soften.
  2. Reduce heat to low and continue cooking, stirring frequently, until the onions are deep brown and caramelized, about 1–2 hours depending on your stovetop. Watch carefully to prevent burning and add a splash of water if the pan gets dry.
  3. Season the ground beef with salt and pepper. Divide into 4 to 6 patties depending on the size you prefer. I often make six thinner patties for a faster cook and more surface crisp.
  4. Using the same skillet or a clean one, heat over medium and add a small drizzle of oil if needed. Cook the patties until deeply golden on the first side, flip, then top with crumbled blue cheese. Continue cooking until the other side is browned and the cheese melts.
