This has quickly become a favorite brunch idea: crisp puff pastry, an everything-seasoned border, whipped cream cheese and silky smoked salmon on top.

A while back my mom asked for menu suggestions for a small lunch. A puff pastry tart was the obvious winner — it looks fancy, yet is easy and versatile. Serve it with a light soup, a fresh salad, or both for a complete meal.
Flexible and customizable

The tart is airy and crisp, almost like a delicate pizza. It’s endlessly adaptable: think of your favorite smoked salmon bagel toppings and layer them on. Leave off anything you don’t love and add any extras you enjoy.

The pastry bakes into a perfect everything-seasoned edge. You can make your own everything seasoning and keep it in the pantry, or use a store-bought version — both work great.

After baking, spread the tart with whipped cream cheese — the whipped texture is important. It’s light, easier to spread over a flaky surface, and looks better. Don’t worry about lifting a few flakes while spreading; the toppings will hide any imperfections.

Toppings
Finish the tart with:
- Smoked salmon, sliced or torn
- Pickled onions or very thinly sliced red onion
- Fresh dill or other herbs you like
- Capers for a briny pop
- An extra pinch of everything seasoning, if desired
- A generous squeeze of fresh lemon

Ingredients
- 1 sheet puff pastry, thawed if frozen
- 1 to 2 tablespoons everything seasoning (recipe below)
- 1 large egg + 1 teaspoon water, lightly beaten for egg wash
- 2/3 cup whipped cream cheese
- 3 to 4 ounces smoked salmon
- quick pickled onions, for garnish
- fresh dill, for sprinkling
- capers, for garnish
- thinly sliced lemon

- 2 tablespoons dried minced onion
- 2 tablespoons toasted sesame seeds (optional: black sesame seeds)
- 1 tablespoon poppy seeds
- 1 tablespoon dried minced garlic
- 1 teaspoon flaked sea salt
- 1/4 teaspoon black pepper
Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.

Place the puff pastry on the baking sheet and prick the surface all over with a fork. Brush with the egg wash (1 large egg + 1 teaspoon water). Sprinkle the edges with everything seasoning.

Bake for 20–25 minutes, until golden brown and puffed. If the center puffs up too much, gently deflate with a fork.

Allow the pastry to cool slightly. Spread whipped cream cheese over the tart — the light whipped texture is easier to spread without tearing the pastry.

Layer smoked salmon on the cream cheese. Top with pickled onions, fresh dill, capers, and an extra pinch of everything seasoning if desired. Finish with a squeeze of lemon, slice and serve.
