My mom always made a vegetable pizza that everyone loved. I, however, had other ideas — enter: fruit pizza!
Years ago she made one and I was completely obsessed. It must have been at least 15 years ago, but I still remember it clearly. I was thrilled when she still had the recipe.

This dessert is indulgent because the crust is a sugar cookie. It’s rich, but if you keep the cookie base and the cream cheese layer thin, it becomes a light, refreshing treat. Feel free to use any combination of fruit you prefer.

Everyone goes wild for this one — it’s a must-try. Since it’s piled with fruit, it can even feel a bit wholesome. And yes, it includes a touch of coconut rum for extra flavor.

Ingredients
Fruit Pizza
- 1 Pillsbury sugar cookie dough
- 4 oz cream cheese, softened
- 1 tub Cool Whip
- 2 tablespoons coconut rum
- 1 cup sliced strawberries
- 3/4 cup blueberries
- 2 kiwis, sliced
- 1 banana, sliced
Glaze
- 1/3 cup sugar
- 1/3 cup orange juice
- 2 tablespoons lemon juice
- 1 1/2 teaspoons cornstarch
- 1/4 teaspoon salt

Preheat the oven to 350°F (or follow the temperature on the cookie dough package).

Let the dough come to room temperature, then press it thinly into a cookie sheet. Bake about 10 minutes, rotate the pan, then bake another 5 minutes. Baking time varies by oven and how cold the dough was, so watch closely and avoid overbaking.

Once the crust has cooled, beat the cream cheese, coconut rum, and Cool Whip together with a hand mixer. Spread this mixture over the cookie crust. Arrange strawberries, kiwis, and blueberries on top, leaving room for the banana slices (add the banana last so it stays fresh). Refrigerate while you prepare the glaze.
Glaze

Combine sugar, orange juice, lemon juice, cornstarch, and salt in a small saucepan. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and let cool about 10 minutes.

Add the banana slices to the pizza, then drizzle the cooled glaze over the fruit. Refrigerate for at least 1 hour before serving.
