Happy weekend! I hope you’re able to take a moment to relax and enjoy good food and warm weather. This week on the blog I published several new recipes and roundups that are perfect for summer cooking, quick weeknight dinners, and easy entertaining.
I posted a light and savory sweet corn and zucchini frittata that’s ideal for breakfast, brunch, or a simple dinner. There’s also a fun puff pastry fruit pizza that makes an easy, impressive dessert or snack when you want something fresh and bright. If you’re looking for fast evening meals, I shared a collection of my favorite summer weeknight dinners that are all about minimal fuss and maximum flavor. And, as usual, there’s a new Summer Fridays post with seasonal ideas and small joys to carry you through the weekend.
You can find my curated favorites and the tools I use across my Amazon storefront, ShopMy, and my LTK shop if you’re interested in shopping the items I recommend for the kitchen, home, and life.
There’s also a new weekly menu to help you plan dinners and keep meal prep simple, plus a fresh A Week in the Life post where I give a candid peek into the rhythms of our everyday routines—from quick family meals to time-saving kitchen shortcuts.
My Substack newsletter is another place I share recipes, stories, and recommendations each week—if you’d like an easy way to keep up with everything new, that’s where I collect extras and thoughts in a slightly longer format.
Thank you so much for the ongoing support and enthusiasm for my cookbook, Easy Everyday. It’s been wonderful to see the recipes from the book being made and adapted in so many homes. If you haven’t picked up a copy yet and want a hands-on guide for easy, reliable cooking, it’s available to order.
What I’m Loving This Week
There are so many delicious ideas I’ve bookmarked this week. A no-bake chocolate cheesecake caught my eye for its ease and elegant finish—perfect for hot nights when you don’t want to heat up the oven. I’m also excited about hasselback kielbasa bites with mustard aioli; they’re an irresistible party snack with lots of flavor and great texture.
Buffalo chicken zucchini boats are on my must-try list for a lighter twist on a classic comfort flavor, and baked corn on the cob looks like an effortless way to upgrade summer corn with minimal effort. For something nostalgic and fun, a peanut butter and strawberry jam cobbler feels like the perfect cozy-sweet dessert.
Peach cobbler muffins are another summer standby—portable, buttery, and packed with bright fruit. I also want to try crispy jicama fries for a crunchy, refreshing alternative to traditional fries. A Greek wedge salad feels both timeless and spectacular for summer gatherings, and a peach cobbler lemonade sounds like the ideal cold drink to pair with outdoor meals.
Shredded beef enchiladas are sounding especially appealing for making ahead and feeding a crowd, while simple strawberry muffins are a classic treat that never disappoints. Mushroom ramen looks wonderfully comforting for cool evenings, with deep savory broth and tender mushrooms balancing everything out.
Finally, a vibrant rainbow veggie wrap is the kind of easy, pretty lunch I love, and mango fish tacos feel like the ultimate summer meal—bright, fresh, and full of texture. All of these picks are inspiring my menu planning and snack choices this week, and I hope some of them inspire you too.
Wishing you a relaxing weekend filled with good food and small pleasures. See you on the blog soon with more recipes and seasonal ideas!
