Everything is right with the world again.
There’s a pound of bacon in my fridge, and now I can sleep easy.

If you missed it, I went a week without bacon because I actually forgot to buy it.
How that slipped my mind is beyond me, but it happened.
You can imagine how badly I wanted to fry up the whole pound, curl up with a trashy magazine and binge-watch reality TV. It’s my favorite way to decompress.

Please don’t go, though, because you’ve got to hear about these pancakes.

Shortly after I got married I grated a sweet, juicy apple into my pancake batter. It was wonderful — so light and bright — but somehow I never did it again. It completely slipped my mind.
To be honest, the chaos of early married life (16 bobbleheads in the living room and a looming novelty turkey in my husband’s bachelor pad) kept me from remembering what I was doing in the kitchen.
Last week the idea came back to me, and since I was ravenous for bacon I added that too.
I can now die happy.
Yes—there are apples and bacon baked right into these pancakes. The sweet apple and salty bacon create the perfect sweet-and-savory balance with great texture in every bite.

Apple Bacon Pancakes

Ingredients
- 2 cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs, beaten
- 1 1/2 cups milk
- 1 tablespoon canola oil
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 4 slices bacon, fried and crumbled
- 1 Gala apple, grated
Instructions

In a bowl, whisk together the flour, baking powder, cinnamon and salt. Add the milk, beaten eggs, vanilla and oil; stir until smooth. Fold in half the crumbled bacon and all of the grated apple.

Heat a skillet or griddle over medium heat. Drop the batter by 1/4-cup portions to form 3–4 inch pancakes. Wait until bubbles form on the surface, then flip and cook another 30–60 seconds until golden.

Serve topped with the remaining bacon and a drizzle of maple syrup.
