Oh, this fig cocktail is an absolute stunner!

I get ridiculously excited for fig season. It feels like it lasts only a blink here, so when fresh figs appear I buy them for cheese plates, risotto and — most recently — cocktails. I snack on them raw, roast or caramelize them for desserts, and they make every dish feel instantly special.
This brown sugar fig cocktail might just be my favorite new dessert-drink.

Just look at it — juicy fresh figs muddled with brown sugar, creating the kind of syrupy base that makes you want to dive right in.

Figs have been a passion of mine since my twenties. They weren’t part of my childhood pantry, and discovering dried figs changed everything — they’re one of my go-to snacks, especially with nut butter. They’re satisfying, portable, and honestly I reach for them more than other dried fruits.
A fig cocktail has been on my mind for a while. I considered using fig jam, which is wonderful, but I waited and used fresh fruit — it’s worth the patience.

Here’s how it comes together.
Muddle ripe figs with brown sugar and a squeeze of lemon until the fruit breaks down into a syrupy compote. The lemon simply adds just enough juice to help you muddle — it doesn’t make the drink tart or bitter. If you like, a hint of vanilla bean is a lovely addition.
I tried bourbon initially, and while bourbon with fig and brown sugar is delicious, it overwhelmed the delicate fig flavor in this drink. Instead, prosecco or another dry bubbly is the perfect topper — it keeps the cocktail light, effervescent and not overly sweet. If you prefer a sweeter finish, choose a sweeter sparkling wine or substitute soda or ginger beer.
After muddling, spoon the fig mixture over crushed ice (or cubed, if you prefer) — about 2 to 3 tablespoons per glass or divide evenly — then top with chilled prosecco. Garnish with a sliced fig and serve immediately. The result is bright, bubbly and wonderfully refreshing.

Ingredients
- 10 to 12 ripe figs sliced and stems removed, plus a few extra for garnish
- 2 tablespoons brown sugar
- the juice of 1 lemon
- 1 750 mL chilled bottle of prosecco

Note: If your figs are very small, you may need a few extra. Use soft, ripe, juicy figs for the best flavor.

In the bottom of a large glass or jar, combine the figs, brown sugar and lemon juice. Use a muddler to press and mash for about 5 minutes, until the figs break down into a syrupy mixture. Remove any large pieces of skin if desired.

Fill glasses with crushed or cubed ice. Divide the fig mixture among the glasses (about 2 to 3 tablespoons per glass), top with prosecco, add a sliced fig for garnish, and serve immediately.
