Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mashed bananas, about 2 to 2½ medium bananas
  • ½ cup sour cream or plain Greek yogurt

  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick baking spray.
  • In a small bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, whisk the melted butter and brown sugar. Add the eggs one at a time, whisking after each. Stir in the vanilla and mashed bananas.
  • Fold in the dry ingredients until just combined, then stir in the sour cream or Greek yogurt until evenly mixed.
  • Pour the batter into the prepared loaf pan. Bake 55 to 65 minutes, or until a tester inserted in the center comes out clean.
  • Cool completely before glazing. Allow the glaze to set for 20 to 30 minutes before slicing.
