Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mashed bananas, about 2 to 2½ medium bananas
- ½ cup sour cream or plain Greek yogurt

- 1 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- pinch of salt

Preheat the oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick baking spray.

In a small bowl, whisk together the flour, baking soda, and salt.

In a large bowl, whisk the melted butter and brown sugar. Add the eggs one at a time, whisking after each. Stir in the vanilla and mashed bananas.

Fold in the dry ingredients until just combined, then stir in the sour cream or Greek yogurt until evenly mixed.

Pour the batter into the prepared loaf pan. Bake 55 to 65 minutes, or until a tester inserted in the center comes out clean.

Cool completely before glazing. Allow the glaze to set for 20 to 30 minutes before slicing.
