I told you my buffalo obsession was getting out of control.

“Obsession” might sound dramatic, but it’s the most accurate word for my current relationship with buffalo flavors. Lately I’ve been adding that spicy tang to almost everything. It used to be reserved for wings, but now it’s showing up where you’d least expect it — like these quinoa sliders.
Aside from buffalo sauce, I’m equally smitten with sweet corn. Every summer I seem to get more attached, and this year is no exception. I can’t wait for the peak corn season when the ears are fresh off the stalk, but in the meantime I’m making do with whatever I can find. It’s more than worth it.

Quinoa patties are one of those versatile things I always come back to. Whether it’s a trend or a staple, quinoa adapts to flavors you pair with it and crisps up beautifully, which satisfies my need for crunchy texture. Formed into patties, they work as sliders, burger alternatives, salad toppers or snack bites — the possibilities are endless.
These sliders have a touch of buffalo wing sauce mixed into the quinoa, but the sweet corn is the real star. There’s also plenty of cheese, which melts into pockets of creamy, salty goodness. Yes, it’s cheesy. And yes, that’s the point.

I can’t even remember the first time I tried quinoa, only that it was long before blogs and influencers turned it into a household name. Back then, a blog to me was something teenagers used to post melodramatic rants on social media. My tastes then — and now — weren’t about following trends. I tried quinoa because I liked it, plain and simple.

Enough about my culinary nostalgia — let’s talk sliders. These are small, crunchy, loaded with cheese and wing sauce, and perfectly snackable. Because they’re slider-sized, you can easily have a few without feeling guilty. Stack them on toasted buns, drizzle extra buffalo sauce on top, and serve with your favorite dipping sauce.

Crispy Buffalo Style Quinoa Sliders with Sweet Corn + Scallions

Ingredients
- 2 cups cooked quinoa
- 1 cup cooked sweet corn
- 4 scallions, sliced
- 2 garlic cloves, minced
- 2 tablespoons freshly chopped cilantro
- 1/3 cup finely grated romano cheese
- 1/4 cup panko bread crumbs
- 2 tablespoons flour
- 2 large eggs
- 2 tablespoons buffalo wing sauce + more for topping
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2-3 tablespoons olive oil
- 4 ounces white cheddar cheese
- 8-10 multigrain slider buns or dinner rolls, toasted
Instructions

In a large bowl, combine quinoa, corn, scallions, garlic and cilantro. Mix well. Add the romano cheese, panko, flour, salt and pepper, and toss to combine. Stir in the eggs and buffalo wing sauce until the mixture is evenly moistened. Using your hands, press the quinoa mixture together to form patties and set them on a cutting board.

Heat a large skillet over medium to medium-high heat and add the olive oil. Fry the patties until crispy and golden, about 3–4 minutes per side. Once both sides are golden, top each patty with white cheddar and cook until melted. Assemble sliders on toasted buns and drizzle extra buffalo wing sauce on top. Serve immediately.
