It’s a great make-ahead dip for chips, pretzels, or veggies and a wonderful spread for sandwiches. I often use pimento cheese in crispy chicken tacos, grilled cheese sandwiches, deviled eggs, grilled chicken sandwiches, jalapeño poppers, BLTs, cheesy grits, and even quiche.

Waffle fries are the perfect choice here because their holes and ridges hold the cheese beautifully. Pimento cheese contains cream cheese, so when heated it melts into a rich, cozy blanket over the fries rather than stretching like a typical mozzarella pull — and that blanket is glorious.

- 1 — 20-ounce bag frozen waffle fries
- 3/4 cup pimento cheese (about half a batch of a standard pimento cheese recipe)
- 3 tablespoons chopped fresh chives
- Pickles, for serving
Instructions
- If making pimento cheese from scratch, prepare it first and set aside.
- Preheat the oven to 450°F and line a baking sheet with parchment paper.
- Spread the waffle fries in a single layer on the baking sheet. Roast for 20–25 minutes, or until golden and very crispy.
- Remove the sheet from the oven and dollop the pimento cheese evenly over the fries.
- Return the pan to the oven for 4–5 minutes, just until the cheese warms and becomes melty.
- Remove from the oven, sprinkle with chopped chives, and serve immediately with pickles on the side.
