This French onion quiche is an elegant addition to any holiday or weekend brunch. It combines deeply caramelized onions, nutty gruyere and fresh thyme with a simple puff pastry crust. Once the onions are caramelized the quiche comes together quickly, and the result is rich, flavorful and impressive.

Why puff pastry?

I prefer puff pastry over traditional pie crust for a few reasons: it’s flakier, richer and far easier to work with. Pie dough can be fussy and, for quiches, the egg filling sometimes puffs and spills over a fragile crust. Puff pastry gives buttery layers, reliable structure and a beautiful presentation every time.

That said, caramelizing the onions does take time, but it’s worth the wait. The deeply sweet, golden onions are the backbone of the dish and bring all the French onion flavors into the quiche.

A buttery, flaky puff pastry shell filled with caramelized onions, gruyere and thyme — perfect for brunch.

Ingredients

  • 4 tablespoons butter
  • 4 sweet onions, thinly sliced
  • Kosher salt and pepper
  • 3 garlic cloves, minced
  • 1 sheet puff pastry, thawed if frozen
  • 8 large eggs
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated gruyere cheese
  • 2 tablespoons chopped fresh parsley, plus more for topping
  • 1 tablespoon chopped fresh thyme

Instructions

  • Heat the butter in a large skillet over medium heat. Add the sliced onions and a generous pinch of salt. Cook, stirring frequently, for 15–20 minutes until the onions are translucent.
  • Reduce the heat to low and continue to cook the onions, stirring often, for at least 1 hour or longer until deeply caramelized and golden. If they become too dry, add up to 1/4 cup water. Stir in the minced garlic and cook 30 seconds more. Remove from heat and let cool.
  • Preheat the oven to 425°F (220°C).
  • Line a 9×13-inch baking dish with the puff pastry sheet and prick the surface all over with a fork to prevent excessive bubbling.
  • In a large bowl, whisk together the eggs, heavy cream, most of the gruyere, the caramelized onions and the chopped herbs. Season with a pinch of salt and pepper. Reserve some cheese and onions for topping.
  • Pour the egg mixture into the prepared puff pastry crust and sprinkle the remaining cheese on top.
  • Bake for 25–30 minutes, until the custard is set and the crust is golden. Let cool slightly, then garnish with reserved caramelized onions and extra herbs. Slice into squares to serve.
