I’m not usually drawn to pastries. I can walk past a box of donuts without a second thought, and a stray danish won’t tempt me. But every now and then all I want is a warm muffin with a smear of butter.
We don’t keep muffins around often — they feel like a breakfast food and we rarely sit down for a leisurely morning meal. Mornings are rushed, and Mr. How Sweet has a strict routine that includes a mountain of egg whites for his protein. So when I do make muffins, it’s usually in the afternoon or evening.
Then they become a dessert, demolished by Mr. How Sweet while he stands at the sink.

I love sprinkling raw turbinado sugar on top for a satisfying crunch.
Let’s be honest: muffin tops are the best part. I’m guilty of picking off the tops and leaving the middles on the counter — not because I want to waste them, but because the top is what I crave. Yes, this habit sometimes leaves crumbs on my jeans, but that’s a small price to pay.

Muffins have to be warm for me — even piping hot. My impatience scorches my tongue a few times a week, and if the recipes ever start sounding dull, blame my numb tastebuds. I’d rather risk a burnt tongue than miss the perfect warm-butter moment.
If I’m feeling slightly responsible, I’ll eat the whole muffin. But a generous slather of butter on a warm top usually satisfies every fiber of my muffin-loving self.

Chocolate Chip Muffins

Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 cup white sugar
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1/3 cup butter, melted
- 1 cup chocolate chips
- 2 tablespoons raw turbinado sugar
Instructions

Preheat oven to 350°F (175°C). Lightly grease or line 12 muffin cups.

In a large bowl, whisk together the flour, baking powder, sugar, and salt. Stir in the milk, egg, melted butter, and chocolate chips until just combined. Spoon batter into the prepared muffin cups and sprinkle the tops with raw turbinado sugar.

Bake 15 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let cool briefly before serving.

Remember when I mentioned that Mr. How Sweet is a man’s man? Last night proved it again. He and his friends cut down a split tree in our backyard in the pouring rain after a massive snowstorm. There may have been a few cases of beer involved and some regrettable country music blaring in the background.
He came in covered in mud, so I fed him pizza. Simple, satisfying, and perfectly deserved.
