Oh my gosh.
Summer is officially here and I’m inexplicably excited. I even washed an old pair of Arden B white cropped pants from 2007 last week to prepare for the season. They’re still in a wrinkled heap at the edge of my bed, but it’s the thought that counts. Two things I will never do: become an ironing fairy or clean my baseboards. I’m a complete disappointment to previous generations.
Here are my top 10 recipe suggestions for this Memorial Day weekend. My favorites probably change day to day, but for now these are the dishes I’d bring to a party — and you should never go empty-handed. Let’s get this party started.
Tilapia Burgers with Watermelon Salsa + Avocado
Not exactly traditional, but a delicious alternative to the usual burgers and hot dogs. I still love a charred hot dog on a toasted bun, but these tilapia burgers are addictive and a refreshing option to bring to a cookout.
Creamy Feta Dip
So simple and surprisingly addictive. If you think you won’t like these flavors, give it a try — it often wins over skeptics. It’s creamy, tangy, and perfect with crisp veggies or pita chips.
Peanut Butter Oatmeal Snack Squares
Make a double or triple batch — these bars are perfect for grab-and-go snacking all weekend. They’re satisfying, relatively healthy, and yes, they include chocolate. Win-win.
Crockpot Bourbon Bacon Baked Beans
Baked beans are basically synonymous with Memorial Day and summer barbecues. These bourbon and bacon–boosted beans are rich, smoky, and an easy crowd-pleaser you can keep warm in the crockpot.
Crockpot Cheddar Beer Chicken
Originally made for tacos, this cheesy, beer-infused crockpot chicken is versatile — use it for sandwiches, quesadillas, or simply serve it pulled. Comfortable, flavorful, and perfect for feeding a crowd.
Strawberry Mango Basil Salsa
Strawberries and mangos are at their peak in summer, making this salsa bright and juicy. If basil isn’t your thing, swap in cilantro, parsley, or mint. It’s a fresh, fruity condiment that pairs well with chips or grilled proteins.
BBQ Portobello Sliders
Mini sandwiches are always crowd-pleasers. These mushroom sliders are meaty, smoky, and adorable — ideal for parties where people want to sample a few things.
Roasted Potatoes to Change Your Life
These roasted potatoes deliver major flavor with minimal fuss. They hold up well for large groups and taste even better if you make a big tray to pass around.
Thai Chicken Wings
If you’d rather not heat the oven, bring the sauce to a boil, grill the wings, and toss them in the sticky glaze. These pack big flavor and are always a hit at outdoor gatherings.
Peanut Butter Fudge Coffee Ice Cream Cupcakes
These are decadent and scream summer with their ice cream element. Make them now, stash them in the freezer, and enjoy them all weekend. Highly recommended.
And obviously, I insist you try a fresh strawberry margarita, a coconut mango mojito, and a fresh mint watermelon soda float — feel free to add vodka if that’s your vibe.
Have a fantastic long weekend! If you’re not observing Memorial Day, have an amazing regular weekend instead. I’ll probably be back to share more of my small life updates on Crumbs at some point.
