Ingredients

  • 1 tablespoon unsalted butter
  • 1 shallot, diced
  • 2 garlic cloves, minced
  • 8 ounces fresh baby spinach
  • Kosher salt and pepper, to taste
  • 4 ounces cream cheese
  • 2 tablespoons grated parmesan cheese
  • 2 teaspoons freshly squeezed lemon juice
  • 1 (about 2-pound) salmon fillet, about 1 inch thick
  • 1 sheet puff pastry, thawed if frozen
  • 1 large egg + 1 teaspoon water (beaten for egg wash)

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large skillet over medium heat, melt the butter. Add the diced shallot and minced garlic with a pinch of salt and pepper; cook 2–3 minutes until softened. Stir in the spinach and cook, stirring, until wilted. Once wilted, add the cream cheese and stir until melted. Mix in the parmesan and lemon juice. Taste and adjust seasoning.
  • Place the puff pastry on a baking sheet. Spread a layer of the creamed spinach in the center, roughly the size of the salmon fillet. Season the salmon all over with salt and pepper and place it on top of the spinach.
  • Fold the puff pastry up and around the salmon, sealing the edges so the fillet is completely enclosed. Turn the parcel seam-side down. Brush the pastry with the egg wash and lightly score the top to allow steam to escape.
  • Bake for 25–30 minutes until the pastry is golden and crisp and the salmon is cooked through. Let rest 5–10 minutes, then slice and serve.
