Roasted Strawberry, Brie + Chocolate Grilled Cheese

I don’t always know what I’m doing in the kitchen, but pairing chocolate and cheese is something I reach for again and again. It sounds odd, but the combination really works — especially when sweet roasted strawberries are involved.

This is just the beginning of my roasted strawberry obsession. I’ve used them in pancakes and even in savory dishes, and I’m planning to keep sharing variations until you’ve tried them all. Roasting concentrates their flavor and adds a lovely jammy texture that pairs beautifully with creamy brie and melting chocolate.

I used a sturdy, super-crusty multigrain bread here for texture and nutty flavor. With fresh strawberries, creamy brie, a touch of dark chocolate and a little butter, this sandwich feels indulgent but still wholesome. You get antioxidants, a bit of fiber and some protein — which is my way of saying it’s totally justified.

Roasted Strawberry, Brie + Chocolate Grilled Cheese
Makes 2 sandwiches
- 6 strawberries, quartered
- 1/2 teaspoon canola oil
- Pinch of salt
- 2 tablespoons butter
- 4 thick-cut slices multigrain bread
- 2–3 ounces brie, sliced
- 1–2 ounces high-quality dark chocolate (or milk, if you prefer)
Instructions
- Preheat the oven to 375°F (190°C). Toss the quartered strawberries with the oil and a pinch of salt, spread them on a baking sheet, and roast for about 20 minutes until jammy and slightly caramelized.
- Heat a large skillet or griddle over medium-low heat. Butter one side of two slices of bread and place them buttered-side down on the skillet.
- Layer a few slices of brie on each slice of bread in the skillet, then add pieces of chocolate and a generous spoonful of roasted strawberries. Top with a few more slices of brie.
- Butter one side of the remaining two slices of bread and place them buttered-side up on top of each sandwich to form a complete sandwich.
- Cook for 2–3 minutes until the bottom is golden and the cheese begins to melt, then carefully flip and cook until the other side is golden and the cheese is fully melted.
- Remove from the skillet, let rest for a minute, then slice and serve immediately.
