Hello Monday. You aren’t my favorite.

I don’t mean to be harsh, but seriously — Mondays can be the worst. After a weekend of small pleasures (even if that just means pot pie and early-bird dining), the start of the week often arrives with a thud.
My ideal Monday would include:
- chocolate cake
- drinking the leftover wine (no judgment)
- sleeping all day
- skipping the workout
- not opening my laptop
- a long nap
- catching up on the shows I DVR’d Sunday night
- ignoring peanut butter M&M’s on the counter
- another, even longer nap
- ruminating about the shows because they feel like real life
- online shopping after reading beauty blogs
- avoiding laundry
- not unloading the dishwasher (the worst chore ever)
- dinner made of pancakes
That about covers it.

But! Instead of indulging in all that, I’ll be a responsible adult — work, maybe a little play, perhaps some chocolate. Most likely I’ll end the day with a simple, balanced dinner: a sticky, slightly sweet sesame chicken skillet that’s coated in sesame seeds (because I adore them). Before you know it, it’ll be Tuesday.

Ingredients
- 2 pounds boneless, skinless chicken breasts, cut into pieces
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 tablespoons flour
- 2 tablespoons toasted sesame oil
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon white vinegar
- 1/2 cup low-sodium chicken stock
- 2–3 tablespoons toasted sesame seeds
- Brown rice and vegetables for serving
Instructions

Preheat oven to 400°F. In a bowl, whisk together chicken stock, brown sugar, 1 tablespoon sesame oil, garlic, soy sauce and vinegar. Set aside.

Heat a large ovenproof skillet over medium-high. Toss chicken with salt, pepper and flour. Add olive oil and remaining tablespoon sesame oil to the skillet. When hot, add chicken in a single layer and sear until golden on one side, then flip and brown the other side, about 2–3 minutes per side. Pour the stock mixture over the chicken and toss to coat. Turn off the heat and transfer the skillet to the oven. Bake 20 minutes, then remove and sprinkle with sesame seeds. Serve with brown rice and your favorite vegetables.
