I s’mored your french toast.

I did it. I went ahead and made it.
Trashed-up breakfasts are basically my specialty.

A few weeks ago my friend Kristen posted a photo of s’mores French toast and I immediately knew I had to try it. I couldn’t wait — I made it the next day. Sometimes a recipe idea just gets stuck in my head until I make it.
It did not disappoint.
I worried it might have texture problems, be overly sweet, or simply feel too over-the-top. Melty marshmallow and bread together sounded odd in theory.
But it worked.

The bread is dipped in an egg and cream mixture, then coated in graham cracker crumbs for crunch. The result is irresistible — honestly, how can you go back to plain French toast?
This idea isn’t totally new for me. Years ago I posted a cornflake-crusted French toast that was stuffed with chocolate and peanut butter, so my fondness for indulgent breakfast recipes hasn’t changed.

After frying the toast in butter (because everything s’mores-related benefits from butter), I place the pieces on a baking sheet, sprinkle on chopped chocolate, top with marshmallows, and broil until the marshmallows become gooey and lightly browned — just like toasted over a campfire.
Unless you enjoy them charred; then aim for a bit of color.

Yes, this is totally an acceptable breakfast.

S’mores French Toast

Ingredients
- 4 thick slices of bread, slightly stale if possible
- 4 large eggs
- 1/3 cup half and half
- 2 teaspoons vanilla extract
- 1/8 teaspoon cinnamon
- pinch of salt
- 1 cup graham cracker crumbs, plus extra for sprinkling
- 6 ounces high-quality chocolate (dark or milk), chopped
- 1 1/2 cups mini marshmallows
- butter for the pan
Instructions

Heat a large skillet or griddle over medium heat and add about a tablespoon of butter.

In a bowl, whisk together the eggs, half and half, vanilla, cinnamon and salt. Dip each slice of bread in the mixture so both sides are coated. Press the dipped bread into graham cracker crumbs so they adhere, then place the slices on the buttered skillet. Cook until golden brown and set, then transfer to a baking sheet.

Preheat your oven broiler to high. Sprinkle chopped chocolate over each piece of toast, top with mini marshmallows, and add a bit more chocolate. Place the sheet under the broiler and watch closely — the marshmallows will brown in about 30 seconds.

Serve immediately. Optionally drizzle melted chocolate or a little maple syrup on top.
