Ingredients

  • 2 ½ cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 2 large eggs
  • ¾ cup milk
  • ½ cup cream, plus more for drizzling
  • ½ cup applesauce
  • ¼ cup honey
  • 2 teaspoons vanilla extract
  • 1 ½ cups chopped strawberries
  • Sliced almonds for topping (optional)

Instructions

  1. Preheat the oven to 350°F. Spray a 12-cup muffin tin with nonstick spray.
  2. In a small bowl, whisk together the oats, baking powder, cinnamon and salt.
  3. In a large bowl, whisk the eggs with milk, cream, applesauce and honey. Stir in the vanilla.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped strawberries. Divide the batter evenly among the 12 muffin cups.
  5. Bake for 25 minutes, or until set and lightly golden. Remove from the oven and drizzle with extra cream, scatter with nuts, or add a little more honey if desired. Serve warm or cold, or crumble into yogurt. They’re also delicious spread with nut butter.
