Back for round two of Summer Fridays! Here’s what I’m into this weekend.
EATING
Crispy pesto smashed potatoes are a go-to right now. I’m also making a blackened chicken and watermelon salad for bright, fresh dinners, and a simple fresh green bean salad that always steals the show. For an easy weeknight option, roasted shrimp tacos are a favorite.
DRINKING
For warm evenings I love a cherry-lime gin and tonic. Another standby is a crisp cucumber prosecco spritzer—light, refreshing, and perfect for sitting outside.
MAKING
Strawberry avocado salsa is an easy, vibrant dish that pairs well with chips or grilled fish. For snacking by the pool, my creamy chilled queso is a must—rich, tangy, and simple to pull together.
BAKING
It’s peak strawberry season, so I’m baking a pound cake with strawberry icing for dessert. I also love making a peanut butter and jelly crumble when I want something warm and nostalgic.
CRAVING
No-churn coffee Oreo ice cream remains my top craving. It’s indulgent and effortless—always a winner.
GRILLING
On the grill, skirt steak with avocado pesto is a standout—bold flavors and easy prep. I’m also making a buffalo chicken chopped salad when I want something hearty and tangy straight from the grill.
READING
I just started a new summer romance novel and I’m loving it—exactly the escape I wanted. If you need more to read, I keep a seasonal list of recommendations that’s great for poolside lounging.
LISTENING
I’ve been playing a summer country playlist on repeat. I make one every year; it’s perfect for backyard hangs and long drives with the kids.
LOVING
The flat round claw clip has been a little revelation—so handy for driving or busy mornings. I still swear by satin pillow scrunchies for reducing hair breakage. Lately I’ve been using a large voluminizer and a weekly dreamcoat spray to keep hair shiny and full.
WEARING
I’m living in soft tank tops in black, white, and hot pink—they’re comfortable and wearable for everything. For summer footwear I’ve been reaching for jelly-style flip flops that feel more refined than expected; they’re comfortable and versatile enough to dress up or down, and don’t feel like typical “jelly” sandals.
BUYING
We replaced our bedding after ages and I picked a different shade of our favorite sheets. They’re soft, durable, and worth replacing when they start to wear—some dupes just don’t hold up the same way.
SHARING
I put together a small Father’s Day gift guide with a few favorites and things my family loves—easy ideas if you need a quick, thoughtful present.
