How trashy can we get?

That is the question.
Pretty trashy, as it turns out. Who thinks to put sweet potatoes in a grilled cheese? Apparently I do.

This all started because I had a big pan of leftover sweet potato casserole in the fridge. Turning it into sandwiches felt like the logical next move. If your casserole had marshmallows or a crunchy topping, even better — that sweet, toasty layer elevates the sandwich.
Also, at least we’re using whole grain bread, right?

Leftover Sweet Potato Casserole, Brie and Bacon Grilled Cheese

Ingredients
- 2 tablespoons unsalted butter softened for spreading
- 4 slices whole grain bread
- 1/3 cup leftover sweet potato casserole
- 4 ounces brie cheese
- 4 slices cooked bacon
Instructions

Heat a large skillet or griddle over medium-low heat.

Assemble the sandwiches by spreading the outsides of each slice with softened butter. On the inside of one slice, layer a slice or two of brie, the bacon, a generous spoonful of sweet potato casserole, then a little more cheese. Top with the second slice of bread, buttered side up. Cook the sandwiches until golden brown on both sides and the cheese is melted. Serve immediately.
