Triple Berry Vanilla Sheet Cake with Cream Cheese Frosting

I live for a festive red, white and blue dessert. This triple berry sheet cake is an ideal summer centerpiece — a light vanilla sheet cake topped with a fluffy cream cheese frosting and piled high with strawberries, blueberries and raspberries for the perfect patriotic treat.

This triple berry sheet cake is one of my favorite warm-weather desserts. It feels like the start of summer in every bite.

I never cared much about themed food until I had kids — now I want to decorate everything for holidays and seasons. Food especially gets all the red, white and blue treatment in my house.

For this cake I kept the base simple: a tender vanilla-style sheet cake with a hint of almond. It bakes up soft and light and pairs perfectly with a generous layer of cream cheese frosting. The frosting is creamy, tangy and substantial — it elevates the whole cake.

The inspiration came from a birthday cake I recently bought — it was almond-forward and covered in fresh fruit, and the combination of tender cake and juicy berries was so good I had to recreate it at home.

Because strawberries are coming into season, ours right now are incredibly sweet and juicy — almost like candy. Layering those berries over the cream cheese frosting makes each bite bright and summery.

The balance here is lovely: the cake itself isn’t overly sweet, the cream cheese frosting adds richness and tang, and the fruit brings freshness and texture. Ingredients

  • 2 ½ cups all purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 1/2 cups granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 large egg whites
  • 1 tablespoon vanilla extract
  • ½ teaspoon almond extract
  • 1/3 cup plain Greek yogurt or sour cream
  • 1 cup milk (whole or 2% preferred)

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Fruit Topping

  • 2 cups sliced strawberries
  • 1 ½ cups blueberries
  • 1 ½ cups raspberries
  • Fresh mint for garnish

Instructions

  • Preheat the oven to 350°F. Spray a 9×13-inch baking pan with nonstick spray (one with flour in it works well).
  • In a bowl, whisk together the flour, baking powder and salt.
  • In the bowl of a mixer, beat the sugar and oil until combined. Add the whole eggs and egg whites, then beat in the vanilla, almond extract and yogurt.
  • Add half of the dry ingredients, mix briefly, then add the milk. Finish by mixing in the remaining dry ingredients until just combined.
  • Pour the batter into the prepared pan and bake 25–32 minutes, or until a tester inserted in the center comes out clean. Let the cake cool completely before frosting.

Cream Cheese Frosting

  • Beat the cream cheese and butter until smooth. Add the powdered sugar and beat until combined, then stir in the vanilla.
  • Spread the frosting over the cooled cake. For food safety and best texture, store the frosted cake in the refrigerator. Top with the sliced strawberries, blueberries, raspberries and a few mint leaves just before serving. Optionally, drizzle a little honey over the fruit for extra shine.
