Would you call this breakfast, lunch, or a snack?
When I loosely plan meals for the week — and I mean loosely, because telling me I must eat something is the best way to make me rebel — I always include some kind of toast. Most often it’s avocado toast, sometimes with eggs or goat cheese, but I also rotate in other favorites: nut butter and fruit, hummus with toppings, or an open-faced sandwich. For me, toast is especially satisfying at lunchtime.

If I have toast for breakfast, I’ll often repeat it at lunch unless something truly spectacular shows up in the leftovers department. And yes, toast works wonderfully as a snack too — though in snack mode I limit myself to a single slice. Why can’t I be that disciplined with chocolate?

The version I can’t stop making right now starts with whipped ricotta. It’s unbelievably creamy — I like to mix in vanilla bean paste for gentle sweetness and floral warmth since this toast is topped with fruit.
Next: thinly sliced banana, piled on generously.

I finish with a generous drizzle of local honey. If you want to elevate the flavor, stir a touch of vanilla bean paste into the honey before drizzling — it adds an aromatic hint that pairs perfectly with the ricotta and banana.
For crunch, I add a handful of chopped pistachios and a light sprinkle of hemp seeds. Hemp hearts are my go-to for many toasts and smoothie bowls because they add subtle nuttiness and nutrition, but here the pistachios bring the satisfying textural contrast.
And, of course, coffee. Lots of coffee.

Ingredients
- 4 slices bread toasted
- ½ cup ricotta cheese
- 2 teaspoons vanilla bean paste
- ¼ cup honey
- 1 banana very thinly sliced
- ½ cup pistachios chopped
- 2 tablespoons hemp hearts
Instructions

Add the ricotta and 1 teaspoon vanilla paste to a food processor and blend until smooth and creamy. Stir the remaining teaspoon of vanilla into the honey.

Spread the whipped ricotta on toasted bread, layer on the banana slices, drizzle with the vanilla-honey, and finish with chopped pistachios and hemp hearts. Serve immediately.
