Another week in quarantine down!

This week’s menu is shaping up to be delicious. I’m so glad these ideas are helping you make flavorful meals and nourish yourself with simple, comforting recipes.

Let’s start the week with a cozy lemon pasta. It’s light, comforting, and great on its own, but feel free to add leftover chicken, shrimp, or whatever protein you have on hand. I love serving it with parmesan-roasted broccoli for a simple, satisfying meal.
Next up: my favorite cheeseburger chopped salad. It’s surprisingly packed with flavor and comes together quickly, making it an excellent midweek dinner.
Have you fired up the grill yet? We have — and a grilled Caesar salad topped with buffalo chicken is one of our go-to grilling meals. It’s also a useful way to clear out the fridge and use up odds and ends.
One of my reliable dinners is cajun salmon with salted lime butter. It’s fast and versatile; serve it with rice, pasta, or a crisp salad for an easy, crowd-pleasing plate.
If soups are still your comfort food of choice, try the sweet potato ginger soup. It’s cozy, warming, and always gets great feedback.
Rounding out the week: Mediterranean turkey burgers. They’re flavorful, adaptable, and great topped with a variety of spreads, veggies, or crumbled over a salad.
For lunches, I’m sticking with my classic egg salad — perfect for using up dyed eggs after holiday celebrations. You can also swap those eggs into a bacon-blue potato salad in place of soft-boiled eggs, or make a quick roasted broccoli toast for a lighter option.
And for breakfast? Coffee coconut shakes are my pick this week — creamy, energizing, and easy to make.
