What We’re Eating Now: Real-Life Meal Ideas and Weekly Menus

Many days I suffer from “cooker’s block.”

I want to cook, but I have no idea what I actually want to eat. More than wanting to cook, I want to enjoy a good meal.

Cooking is simply the vehicle to get there.

Over the past few months I’ve tried several recipes I discovered on food blogs, and I wanted to share a few favorites we’re loving right now.

I made the high-fiber marshmallow treats from Estela’s site, and we absolutely adore them.

They’re basically a high-fiber take on classic rice krispie treats. Mr. How Sweet loves rice krispie treats so much he often finishes the whole pan right after I make them. I warned him that eating the entire pan at once might be a bit much, since these bars are packed with fiber. That warning wasn’t heeded.

Another repeat favorite is the lightened-up boneless buffalo strips from Active Foodie. I’ve made that recipe five or six times already.

We love them. Mr. How Sweet asks for them almost every week. You would never guess these are a lighter version of the classic — they’re juicy, flavorful, and satisfying without feeling heavy.

One of my other go-to finds is Angela’s better-than-bottled balsamic dressing from Oh She Glows.

I’m not a big vegetable person, but I do enjoy an occasional salad. I often default to plain vinegar because I like tartness, but this balsamic dressing has become my new staple. Make a big jar for the week and it keeps improving as it sits.

Just this weekend I tried Ashley’s crunchy quinoa granola from Edible Perspective, and it’s dangerously addictive.

I can’t keep my hands out of the jar — it’s that good.
