I fully intended to share a bacon-filled recipe today, but then I realized I didn’t have any bacon.
Fail. And yes, I was too lazy to go buy some.
Then I got distracted by the sound of Mr. How Sweet running sprints on the treadmill downstairs and shouting at himself. It was loud, annoying and a little traumatizing, so I curled up on the couch and stayed put.
So instead of a new recipe, here’s a roundup of favorite meals you can make in 30 minutes or less. I don’t mean the exaggerated “Rachael Ray everything-is-already-out-on-the-counter” version — just recipes that, if you’ve checked them ahead of time and have the ingredients at home, can be on the table in about half an hour.
Healthy Loaded Nachos
Fully customizable — top them with whatever you like. Bacon is an especially excellent choice.
Mango Colada Parfait
This one’s quick and delightful — more of a favorite treat than a rushed meal.
Pizza Pasta
A playful mash-up of pizza flavors and pasta. Vegetables are optional — add them if you like, but don’t expect me to.

I’ve made these for years. The secret touch is sautéed peppers and onions — they always get rave reviews.
Multigrain Waffles
Breakfast for dinner is one of the best ideas — comforting, fast, and sometimes absolutely necessary.
