This week on the blog I posted a refreshing summer stone fruit couscous salad, a triple berry ice cream cake, and a quick, simple strawberry and feta side salad. There’s also a new Summer Fridays post that I’m excited to share.
You can find this week’s menu and a peek at a week in our life on the blog as well. If you missed it earlier, I also published my summer reading list—perfect for long, lazy days.
Everyday Dinners is available to order now, and it’s currently on a major sale. If you get a copy, be sure to join the Everyday Dinners Cookbook Club on Facebook—we just started a new summer challenge this week. The cookbook club has been going strong since The Pretty Dish launched in 2018, and it’s so fun to see your creations on Instagram and in the group. Join to enjoy the challenges, community, and giveaways!

What I’m Loving Right Now
I’m crushing on a lot of delicious recipes right now. Blueberry rice pudding sounds cozy and bright for summer mornings. Chocolate peanut butter cupcakes are an all-time favorite I never tire of. Cajun salmon cakes caught my eye for an easy, flavorful dinner. Lemon brownies are calling my name—so bright and rich. I’ve been dreaming about making a tomahawk steak for a special night in.
Carnitas flatbreads with avocado crema are tempting for casual weekend meals, and Mexican chocolate cookies look like a fun twist on a classic. Mango mousse is a lovely, light dessert for summer gatherings, while berry-stuffed French toast feels perfect for a slow weekend brunch.
I also want to try a dirty chai maple iced latte for a cool caffeine treat, and a strawberry limeade ice tray hack that looks refreshingly unreal. Cilantro lime beer can chicken tacos would be such a crowd-pleaser, and cinnamon toast crunch Rice Krispie treats are a nostalgic, crunchy sweet to make with kids or friends.
All of these recipes are inspiring me to get in the kitchen and enjoy the best of the season—fresh fruit, bright flavors, and easy, satisfying meals. If any of these sound good to you, try one this week and let me know how it goes!
