How about pairing a little chocolate with beer?

If you’re currently daydreaming about layered flavors in a milkshake, you’re in good company. This version combines dark stout, creamy vanilla ice cream, marshmallow cream, rich chocolate ganache, whipped cream and crunchy graham cracker shards in one glorious glass.
And yes, it’s finished with a toasted marshmallow because a torched marshmallow takes a milkshake over the top. Who’s in?

My first encounter with a stout was with a chocolate-forward beer, and the name alone sold me. I ordered it during a summer trip shortly after turning 21; I’m pretty sure it was called Mackinac Island Fudge. The description promised chocolate, so of course I had to try it.
My dad tried one first and kept insisting you could “really taste the chocolate.” Naturally I followed suit, expecting something as intensely chocolatey as a truffle. It was pleasant and chocolatey in a way, but not the all-out chocolate experience I’d imagined. That taught me to be cautious of flavor descriptions: when someone says beer or coffee tastes like chocolate, I want real chocolate—not just a hint.

Of course, a beer that only hints at chocolate makes sense — many stouts offer subtle cocoa or coffee notes rather than tasting like melted chocolate. That initial beer was enjoyable and substantial, but it didn’t satisfy my chocolate fantasy.
That memory has stuck with me whenever I spot a stout on a menu. It inspired these chocolate stout milkshakes, which I couldn’t resist turning into s’mores milkshakes—because why stop at one indulgence? The result is decadently over-the-top and delightfully messy.

For these shakes I used Guinness, which was what I had on hand, but a chocolate stout or a coffee stout would make them even more chocolate-forward. If you happen to have a chocolate stout in the fridge, use it — it’s a perfect match.
It might be my goal to always have a chocolate stout around for frosty moments like this.

Ingredients
- chocolate ganache for swirling the glasses
- 1 1/2 cups vanilla ice cream
- 2 tablespoons marshmallow cream
- 1 tablespoon chocolate ganache
- 6 ounces Guinness or a chocolate/coffee stout
for topping
- whipped cream
- toasted marshmallows
- graham cracker pieces/crumbs
chocolate ganache
- 6 ounces high-quality dark chocolate chopped
- 1/3 cup heavy cream
Instructions

Swirl a tablespoon of the chocolate ganache around the inside of each serving glass.

In a blender, combine the ice cream, marshmallow cream, ganache and beer. Puree until smooth and creamy. Pour into the prepared glasses and top with additional ganache, a generous dollop of whipped cream, toasted marshmallows and graham cracker crumbs. Serve immediately.

Place chopped chocolate in a bowl. Heat the cream in a small saucepan over low heat until bubbles form at the edges and the cream is warm. Pour the hot cream over the chocolate and let sit for 30 seconds, then stir until the ganache is smooth and glossy.
