To make a summer pizza, gather seasonal ingredients you enjoy:

Makes 1 pizza

Ingredients:

  • 1 batch pizza dough (I used half whole wheat flour)
  • 1 sweet onion, sliced
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 4 garlic cloves, minced or pressed
  • 2 tablespoons olive oil
  • 1/2 cup freshly grated mozzarella cheese
  • 2 grilled boneless, skinless chicken breasts, sliced or shredded
  • 1 ripe peach, thinly sliced
  • 2/3 cup blackberries, coarsely chopped
  • 10–15 basil leaves, chopped
  • 8 ounces fresh mozzarella, sliced

Instructions:

  1. Prepare the dough according to your recipe and allow it to rise. While the dough is rising, caramelize the onions: heat a large nonstick skillet over low heat, add butter and onions with a pinch of salt, cover, and cook for about 20 minutes, stirring occasionally. Stir in the brown sugar and cook 10 minutes more, until deeply soft and golden. Remove from heat and set aside.
  2. Preheat the oven to 375°F (190°C).
  3. Shape the dough to your desired size and brush with the minced garlic combined with the olive oil. Sprinkle the grated mozzarella over the surface.
  4. Top the pizza with the grilled chicken, peach slices, chopped blackberries, chopped basil, and the caramelized onions. Arrange the fresh mozzarella slices evenly on top.
  5. Bake for 25–35 minutes, until the cheese is melted and golden and the crust is cooked through.
  6. Finish with additional chopped basil and a light grating of parmesan if you like. A balsamic glaze also pairs nicely with these flavors.
