Smashburger fries are the ultimate weekend snack — perfect for game day, a shared appetizer, or a lazy Sunday. Think crispy, thin fries piled with creamy cheese sauce, bite-sized smashburger pieces, a tangy house-style drizzle, pickles, and jalapeños. Pure heaven.
If that doesn’t scream “WEEKEND,” I don’t know what does.

Yes — cheeseburger fries. Crispy oven fries topped with a velvety cheese sauce, small smashed burger pieces, a bright dipping drizzle, pickles, and jalapeños. It’s everything you want from a burger and fries, all on one sheet pan.

These don’t need a lot of fanfare — they’re simply the ideal mix of indulgent and shareable. A sheet-pan mess that everyone will love.

I made these because we’re obsessed with the smashburger fries at one of our favorite local burger joints. Their version has caramelized onions and a little heat — we fight over them. After a few visits, I decided to recreate that magic at home. Now we want them all the time.

Quick note on technique: I use frozen fries for this recipe. Achieving ultra-crispy oven fries from scratch is possible but requires extra work (soaking, drying, specific oven steps). For a reliable, fuss-free result, pick a good bag of frozen fries and bake or air fry them according to package directions. Either method works, and you’ll still need the oven on to finish everything together on the sheet pan.

How I make them
Start by baking or air frying a whole bag of frozen fries — you want plenty to share. While the fries cook, make a simple homemade cheese sauce: a creamy, cheesy pour that’s perfect for drizzling.
For the smashburger pieces, break ground beef into small portions and smash each one thin in a hot skillet until nicely browned. The goal is small, crispy-edged pieces that mix perfectly with the fries. You can also make full smash burgers and tear them into pieces if preferred.

I like to finish with a quick thousand island–style dressing for a tangy, slightly sweet drizzle. It keeps well in the fridge for a few days and pairs wonderfully with the burger flavors. Top with pickles and sliced jalapeños; feel free to add caramelized onions, raw diced onion, or chopped tomatoes — anything you enjoy on your burger.
To assemble: spread the hot fries on a sheet pan, drizzle with cheese sauce, scatter the smashburger pieces, and add another layer of cheese. Return the pan to the oven for 5–10 minutes so everything heats through and melds together. Remove, finish with the thousand island drizzle, add pickles and jalapeños, and serve immediately.

Go to town. These were made for the weekend.

Ingredients
- 1 (26 ounce) bag frozen, crispy french fries
- ½ pound ground beef
- Kosher salt and pepper
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 1 cup milk
- 2 ½ cups freshly grated white cheddar
- Pickles, whole or diced, for serving
- Thinly sliced jalapeños, for serving
Thousand Island
- 1 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons dill relish
- 2 tablespoons freshly grated onion
- 1 teaspoon honey
- 1 teaspoon apple cider vinegar
- ½ teaspoon smoked paprika
Instructions
- Preheat the oven to 450°F. Spread the frozen fries in a single layer on a baking sheet and bake 20–25 minutes, flipping once. If your fries require a different time on the package, follow those instructions for best results.
- Season the ground beef with salt and pepper. In a skillet, heat butter until sizzling. Break the beef into 6 even portions and press each portion thinly into the skillet using a spatula, a glass, or a jar to smash. Cook until browned, flip, and cook an additional 1–2 minutes. Remove from heat.
- Make the cheese sauce: melt butter in a saucepan over medium heat, whisk in flour and cook 2–3 minutes until golden and fragrant. Gradually whisk in milk and cook until thickened, about 5 minutes. Lower the heat and stir in cheese a handful at a time until melted. Season with salt and pepper to taste.
- Assemble: drizzle cheese sauce over the fries, top with smashburger pieces (break them into smaller bits if needed), and add another drizzle of cheese. Return the sheet pan to the oven 5–10 minutes to heat everything together.
- Remove from the oven, finish with the thousand island dressing, and top with pickles and jalapeños. Serve immediately.
Thousand Island
- Whisk mayonnaise, ketchup, dill relish, grated onion, honey, apple cider vinegar, and smoked paprika until smooth and creamy. Refrigerate if not using right away.
