Hello PEACH COLADAS!

I am in love with this drink.
This might be my favorite non-alcoholic concoction yet. It’s still booze-free, though you can easily add rum if you prefer.
Summer is still here, and I’m savoring every last warm, sunny day.

Here’s the idea.
I wanted something creamy and peach-forward without being a frozen drink. I’ve been loving virgin piña coladas and everything peach, so I decided to combine the two. The result is dreamy: peach and tropical flavors together in a cool, creamy glass.

The peach component is simple. If you can find peach nectar or juice at the store, use that. If not, blend peeled peaches with a little water or coconut water and strain through a fine mesh sieve to make a fresh peach juice. A juicer works great too.
Then combine the peach juice with coconut milk and pineapple juice, pour over plenty of crushed ice, and finish with a splash of maraschino cherry juice at the bottom of the glass and cherries on top. That cherry syrup adds a sweet, pretty pink note that I adore.

I prefer maraschino cherries that taste real and aren’t overly processed. They add both flavor and color—plus they’re fun to nibble on straight from the jar.
I was obsessed with maraschino cherries as a kid and clearly haven’t grown out of it. The cherry syrup brings an extra hint of sweetness that completes the drink.

This drink is perfect as a single glass or scaled up to a pitcher for friends—just keep stirring before you pour over crushed ice. It’s refreshing, creamy, fruity, and undeniably summery.
