Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/3 cup BBQ sauce
  • 1 head of butter lettuce or your favorite lettuce, leaves removed
  • 1 avocado thinly sliced
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons crumbled feta
  • a few fresh radish slices for garnish
  • lime wedges for garnish

BBQ lime crema

  • 1/4 cup plain Greek yogurt or sour cream
  • 2 tablespoons BBQ sauce
  • 1 to 2 tablespoons lime juice

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment.
  • Place the chickpeas on a paper towel and pat them as dry as possible. Remove any loose skins.
  • Spread the chickpeas on the baking sheet and drizzle with olive oil. Season with salt, pepper, smoked paprika, garlic powder, and onion powder; toss to coat. Arrange chickpeas in a single layer and bake 15–20 minutes, stir and flip, then bake another 15–20 minutes until very crispy.
  • Remove from the oven and toss the chickpeas lightly with 1–2 tablespoons BBQ sauce.
  • To assemble, place a spoonful of chickpeas in a lettuce leaf. Top with avocado slices, chives, feta, and radish. Drizzle with BBQ lime crema and finish with a squeeze of lime.

BBQ lime crema

  • Whisk together Greek yogurt (or sour cream), BBQ sauce, and lime juice until smooth. Store in a sealed container in the refrigerator for several days.
