Acai Waffle Sundae Recipe: Fresh Berry & Honey Drizzle

This is essentially a summer “non-recipe” — quick, easy, and perfect when you want something bright and fun without a lot of work.

We blend a thick acai puree and spoon it over a warm waffle. That’s it. It’s simple, playful, and ridiculously satisfying.

Yes, I know this is a little cliché — the acai trend has been around for a while — but this combination actually works so well. I first made acai bowls years ago, and after trying one from a local juicery recently I fell hard for that tart, slightly earthy flavor combined with nut butter and banana. Instead of buying one every day, I recreate the experience at home and sometimes, I pile it on a waffle.

Frozen acai packets make this easy to do at home — I buy mine at the grocery store — and because they’re more accessible now, I feel free to experiment. A few weeks back I blended acai with frozen blueberries, banana and a little coconut milk until the texture was scoopable, then spooned it on top of a fresh Belgian waffle. If you enjoy acai’s tangy, not-too-sweet taste, you’ll love this. If not, swap the acai for banana “soft serve” (frozen bananas pureed until smooth).

The toppings are the best part — they make the waffle feel like a sundae. I like a mix of berries, sliced banana for richness, shredded coconut, crunchy granola, a drizzle of melted cashew butter, and a few fresh mint leaves. A little chopped dark chocolate is a nice finishing touch if you’re feeling indulgent.

Acai Waffle Sundae

Ingredients

Waffles

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1/2 cup unsalted butter, melted

Acai & Toppings

  • 2 frozen acai puree packets (about 14 ounces)
  • 1 cup frozen blueberries
  • 2 frozen bananas
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 banana, sliced
  • 1 fresh peach, sliced
  • 2/3 cup fresh blueberries
  • 2/3 cup fresh sliced strawberries
  • 2/3 cup fresh cherries, pitted and sliced
  • 2/3 cup granola
  • 1/4 cup cashew butter, melted
  • 3 tablespoons unsweetened shredded coconut
  • Fresh mint for garnish

Instructions

  • Preheat your waffle iron to the highest setting.
  • In a large bowl, whisk together the flour, sugar, cornstarch, baking powder, baking soda and salt. In a smaller bowl, whisk the buttermilk with the vanilla. Separate the egg: place the white into a mixer bowl and the yolk into the buttermilk mixture.
  • Beat the egg white on high speed until stiff peaks form.
  • Stir the buttermilk and yolk mixture into the dry ingredients until just combined. Mix in the melted butter until incorporated. Fold the stiff egg white into the batter gently. Spoon about 1/3 to 1/2 cup of batter into the hot waffle iron and cook until golden and crisp, about 2–3 minutes per waffle.
  • In a high-powered blender, puree the frozen acai packets with the frozen blueberries, frozen bananas, coconut milk and vanilla until thick and scoopable. Spoon a generous scoop of acai puree onto each warm waffle. Top with sliced banana and peach, fresh blueberries, strawberries and cherries, a sprinkle of granola, a drizzle of melted cashew butter, and shredded coconut. Garnish with fresh mint and enjoy immediately.
