I fell in love with bircher muesli years ago. Unlike dry muesli, bircher is soaked—usually overnight—so the oats soften while absorbing the flavors of fruit and liquid. Think of it as overnight oats, but with even more texture and a fruit-forward brightness from grated apple and a splash of juice.

It’s incredibly versatile: swap the fruit with whatever’s in season, change the nuts or seeds, and adjust the toppings to suit your morning mood.

I love overnight oats too—my go-to being peanut butter overnight oats—but bircher offers a slightly different, more layered flavor thanks to the yogurt and grated apple. The yogurt adds creaminess and a little tang, while the apple contributes moisture and natural sweetness.

Prep takes just a few minutes the night before: combine oats and mix-ins, grate an apple into the bowl, whisk together milk, yogurt, juice and vanilla, then pour over the dry ingredients and refrigerate. In the morning, stir and add your favorite toppings.

This bircher muesli is our absolute favorite: oats, nuts, dried fruit and coconut mixed with yogurt, milk, vanilla and grated apple. Store overnight in the fridge then serve in the morning for a satisfying breakfast.

Ingredients

  • 1 cup rolled oats
  • ⅓ cup chopped pecans
  • ⅓ cup dried cherries
  • ⅓ cup unsweetened flaked coconut
  • 3 tablespoons ground flaxseed
  • ½ teaspoon cinnamon
  • pinch of kosher salt
  • 1 apple, grated
  • ½ cup milk (any variety)
  • ½ cup yogurt (plain Greek works well)
  • 1 teaspoon lemon or orange juice
  • 1 teaspoon vanilla extract
  • Toppings: fruit, nut butter, nuts, seeds, extra milk, cinnamon or anything crunchy

Instructions

  • Stir together the oats, pecans, cherries, coconut, flaxseed, cinnamon and a big pinch of salt. Add the grated apple and mix.
  • In a separate bowl or measuring cup, whisk together the milk, yogurt, juice and vanilla. Pour the wet ingredients into the oat mixture and combine. Cover and refrigerate overnight.
  • In the morning, stir and top with your desired fruit, nuts, seeds, nut butter, jam or a drizzle of milk. Enjoy.
