It’s the next best thing — if you’re craving a cozy, seasonal bite.
If you have a bun in the oven, too, this is extremely appropriate.

This toast starts with a serious whole wheat sourdough — the kind you pick up at the store and immediately know is worth toasting. I prefer my bread actually toasted, not just warm. There’s a household debate: I crank the toaster high until the bread is deep golden and crisp; Eddie prefers barely-warm bread and occasionally scorches mine. If a marriage could end over toast, ours might be at risk.
Right now I’m very into autumn flavors — think pears, honey, toasted walnuts and a hint of cinnamon. I used the term “autumn toast” because it sounds a little prettier than “fall toast,” and because I love piling seasonal ingredients on top of simple dishes until they feel intentionally fancy.

It’s not complicated — mashed avocado on toast is easy — but the combination of flavors is outstanding. The creamy avocado, crunchy cinnamon-toasted walnuts, tangy gorgonzola, juicy pear slices and a generous drizzle of honey make this more than a snack; it’s a filling breakfast or lunch that satisfies like a small meal. It almost tastes like a composed salad on toast.
I’ve been eating constantly lately, and this is one of those things I go back to all day long.

Autumn Avocado Toast

Ingredients
- 1/4 cup walnuts
- 1/8 teaspoon cinnamon
- 2 avocados, smashed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices bread, toasted
- 1 pear, thinly sliced
- 2 tablespoons honey, for drizzling
- 2 tablespoons crumbled gorgonzola cheese
Instructions

Add the walnuts and cinnamon to a small saucepan over medium-low heat and toast until golden and fragrant, about 2 to 3 minutes. Stir and shake the pan frequently so the nuts don’t burn. You can break them apart before or after toasting for easier sprinkling.

Smash the avocado in a bowl with the salt and pepper. Spread it on the toasted bread, then layer pear slices and crumbled gorgonzola on top. Sprinkle the cinnamon-toasted walnuts and finish with a generous drizzle of honey. Serve immediately.
