To be honest, I haven’t been doing anything elaborate with that bread lately — just making homemade French bread pizzas again and again. They’re ridiculously easy and endlessly adaptable, and Mr. How Sweet thinks they’re more than enough. Melted, creamy cheese that browns and bubbles on crusty, tender bread is hard to beat — even if there are a few imperfect veggies hiding underneath.

These pizzas come together in minutes. I could happily make a different version every night and keep him satisfied, but he’d be equally thrilled eating the same one repeatedly. Growing up, my mom would pull out frozen Stouffer’s French bread pizzas when time was tight — she probably still stocks a few in the freezer — but these homemade versions are so much better. Instead of dry, crumbly bread you get fresh, perfectly toasted loaves with a crunchy exterior and a soft interior. It’s a fun change from regular pizza, and you control the toppings, so you can load them with as many vegetables or meats as you like.

Ingredients

  • 1 large or 2 small whole grain French bread loaves
  • cheese of your choice

Toppings of your choice; may I suggest:

  • Simple White Pizza
  • Easy Buffalo Chicken Pizza
  • BBQ Chicken Pizza
  • Chicken, Bacon and Spinach
  • Roasted Veggie and Goat Cheese
  • For Mr. How Sweet’s meat lovers pizza: pizza sauce, mozzarella, asiago and parmesan cheeses, pepperoni and sausage crumbles
  • For my pizza: brushed with olive oil and garlic, topped with mozzarella, asiago and parmesan, finished with tomato slices

Instructions

  • Preheat the oven to 350°F (175°C). Slice the baguettes in half lengthwise, place them cut-side up on a baking sheet, and bake for 10 minutes to crisp the bread. Remove from the oven, add your chosen toppings and cheeses, then return to the oven for another 10 minutes. Finish under the broiler for about 1 minute to brown and bubble the cheese — watch closely so it doesn’t burn.
